Blueberries, fresh or frozen 7-8 cups
Maple syrup 3 tablespoons

Coconut milk 1 can

Cravings can strike any time and demand to be satisfied immediately. So next time you need to have a sweet bite, whip up one of these recipes. A guilt-free dessert — isn’t life just complete! 

 

Crunchy Oat Biscuits 

There is nothing better than a salty-sweet, crispy cookie with freshly brewed coffee to start your day! 

 

Instructions: 

  • Heat the oven at 350 degrees F and line 2 baking trays with parchment paper.  
  • In a large bowl, mix flour, sugar, cinnamon, and salt. Let those oats and coconut join in, toss all to combine.  
  • Pour in melted butter in a bowl with honey and mix until they become creamy. Toss in the walnuts, raisins, and pumpkin seeds and mix well. 
  • Make a well in the center of the oat mixture, pour in the butter mixture, and mix to combine.  
  • Using wet hands, form the mixture into 15 balls (about ¼ cup each) and place them on the prepared sheets, spacing them 1 ½ inch apart. Gently press each ball down so it is ½-inch-thick and bake until golden brown for 16 to 17 minutes.  

  

Let them cool completely on the baking sheet before you jump onto these irresistible cookie treats— Let’s just say, good luck eating just one! 

  

Dark Chocolate Bars 

It’s a crime to not include chocolate when talking about desserts! Treat the little kid in you with this amazing post-lunch treat. 

 

Instructions: 

  • Toss the dark chocolate into a bowl. 
  • Fill a pot halfway with water and bring to a boil then lower the heat to medium. 
  • Place the bowl full of dark chocolate in the middle of the pot for the water to cover it all around. 
  • Use a spatula and stir the chocolate every minute or so until completely melted. Remove from heat once done. 
  • Line a rectangular pan with parchment paper and pour the melted chocolate. 
  • Use a spatula to spread the chocolate all around, evenly. 
  • Sprinkle the mixed nuts, goji berries, pumpkin seeds, cranberries, strawberries, and chia seeds on top to give the bars a nutty-fruity flavor. 
  • Place in the fridge to cool for 30 minutes. 
  • Using a sharp knife, cut the bark into pieces.

Gluten-Free Vegan Blueberry Crisp

Instructions: 

  • Preheat the oven to 350F and grease the pan with melted coconut oil.  
  • Place the blueberries, maple syrup, lemon juice, and ground flax seeds in the prepared pan.  
  • Using a large spoon, stir everything together until all the blueberries are evenly coated. 
  • In a large mixing bowl combine the rolled oats, almond flour, gluten-free flour, coconut sugar, almonds, and salt. Stir everything together, and add the coconut oil to the dry ingredients and mix well.  
  • Sprinkle the blueberries with the crumble topping for a juicier touch to the crisp. 
  • Bake for 45 minutes until the blueberries start to bubble up and the top has turned golden brown. 
  • Allow it to cool down before eating. 

  

This dessert is summer in a bowl, with the refreshing juicy berries paired with crispy oats and almonds! What a perfect combination for you to devour.  

  

Crustless Apple Pies 

This cross recipe between an apple pie and a hot apple crumble is something you really need to try. Here is a dessert that melts in your mouth bursting with flavors.

  

Instructions: 

  • Caramel: Mix all ingredient in a saucepan and boil it until thick. Let it cool  
  • Preheat the oven to 350° and line a baking sheet with parchment paper.  
  • Place each apple on the baking sheet 
  • Lightly brush apples with 2 tablespoons of melted butter and sprinkle each with coconut sugar to enhance the sweetness and then cover them with the ¼ of the apple lid 
  • Bake until apples are soft and caramelized, for about 25 minutes then remove from oven.  
  • Take a small bowl, combine the remaining 4 tablespoons of melted butter, coconut sugar, cinnamon, and oats. Add these on top of each apple once they are cool enough then cover with the apple lid again. Return to oven and bake 10 minutes more. 
  • Drizzle with warm caramel before serving.
