Here is a recipe where you get the best of both greens and protein; Mahshi (Stuffed Zucchini & Eggplant).
Instructions:
In a bowl add uncooked rice and minced beef. Season it with salt and pepper. Pour in oil and mix with hands. Scoop out everything from the zucchini and eggplant, leaving it hollow. Fill it with the beef mixture and keep it aside. In a pot, add some oil, crushed garlic, and stir for while. Add tomato paste and fresh tomatoes, stir until it turns into a paste. Pour hot water into the paste, mix well and place your stuffed vegetables. Cook for 40-50 minutes. Serve hot.
