Ingredients

1 large tin of red salmon
2 hard boiled eggs
225g cooked potatoes cut into dice
100g finely diced cucumber
2 tablespoons of mayonnaise (not in stock)
a handful of fresh, finely chopped parsley
Salt and pepper

Summer is salmon season, and our simple salmon recipe is both healthy and tasty. This salmon recipe makes for a light and refreshing lunch or dinner that’s perfect for any day in the summer. Salmon is a good source of Omega-3 and much easier to cook than most people think! Try our Summer salmon loaf for a versatile and delicious meal that suits the whole family. Serve this salmon dish together with a chilled potato salad or fresh greek salad.

Grease a 1 kg loaf tin or line with cooking parchment.

Remove the salmon from the tin and place in a large bowl. Remove any dark skin or bones. Mask with a fork.

Add the diced potato, cucumber and parsley. Add the mayonnaise and seasoning.

Mix the ingredients with a large metal spoon, very gently to combine.
If the mixture appears a little dry, add a little more mayonnaise and mix very gently.

Pour the mixture into the loaf tin and press gently to ensure that the mixture has filled the corners etc. Level the top of the mixture. Cover the loaf tin with kitchen foil.

Pop the salmon loaf into the fridge for at least four hours to chill.

Turn the salmon out onto a serving dish and garnish with shredded lettuce, water cress, sliced tomato and cucumber.
