Buttermilk 1/2 cup
Extra Virgin Olive Oil 2 tablespoon
Egg White 1
Acai Berries 60g
Acai Banana Bread
Butter (at room temp) 1/2 cup

This simple, easy to make raspberry acai chia oats is a handy meal on the run, whether it’s breakfast, snack or a healthy dessert. Prepare the night before and take it to work.

Directions:

  • In a medium size bowl combine raspberry puree, acai puree , honey and milk.
  • In a jar add oats, salt, cinnamon and chia seeds.
  • Pour the raspberry puree mixture into the jar.
  • Cover the jar with a lid and give it a good shake until everything is well combined.
  • Refrigerate overnight or for 3 hours
  • Garnish with more berries and chia seeds

 

Banana Acai Ice cream 

Summers are incomplete without ice cream and what’s better than a rich creamy low calorie guilt free ice cream.

Directions:

  • Combine all the ingredients in a food processor or blender and blend it until creamy.

Directions:

  • Preheat 190°C.
  • In a bowl gently combine flour, cinnamon, raw sugar, and blueberries. 
  • In a separate bowl combine buttermilk, olive oil and egg white.
  • Pour the liquid ingredients into the dry ingredients and mix until combined. 
  • Divide the mixture in a small muffin tin. 
  • Bake for 30-35 minutes until golden brown

 

Acai Banana Bread

What’s more comforting than a warm moist loaf of acai banana bread topped with vanilla ice cream on a weekend night.

Directions:

  • Preheat the oven to 350 degrees. 
  • In a small bowl combine butter, sugar, egg and mashed banana and mix it until its light and fluffy.
  • Gently sift flour and baking soda.
  • Add lemon juice and vanilla essence and mix it until well incorporated.
  • Pour the banana bread mixture in a greased pan.
  • Bake for 45 minutes.
  • Serve and enjoy.
