Ingredients
- 2 AvocadosThe flesh of 2 ripe avocados
- 150ml Hot chicken stock (not inn stock)
- 300ml Mayonnaise (not in stock)
- 150ml Whipped double cream
- 25g Gelatin (not in stock)Either leaf or powdered gelatine is fine
- 1 tablespoon Fresh lemon juice
- As preferred Salt and freshly ground black pepper
Directions
This delicious vegan avocado mousse makes an impressive starter (entrée) for a dinner party as it can be made in advance. It is also ideal as a light lunch. Make the mousse in individual pots and serve them on stylish plates accompanied by an assortment of ‘dippers’ such as celery, carrot and cucumber sticks, cherry tomatoes and finely sliced French stick. This quantity serves six people.

1 Done | 1Dissolve the gelatine in the stock. |
2 Done | 2Put the avocado flesh and lemon juice into a liquidiser and blend or mash the avocado flesh and lemon juice with a fork to get it as smooth as possible. |
3 Done | 3When the stock is cool, add to the avocado with the mayonnaise and mix well. Gently fold in the whipped cream. |
4 Done | 4Season according to taste. |
5 Done | 5Divide the mousse between six ramekin dishes (or similar) |
6 Done | 6Chill in the refrigerator before serving. |
