Ingredients

500g of breadcrumbs
2 large onions, finely sliced
100g dried apricots, finely chopped
100g pistachios, roughly chopped
3 crushed garlic cloves
2 tablespoons of chopped fresh sage
5 beaten eggs
2 tablespoons of olive oil
50g unsalted butter
Salt & freshly ground black pepper

If you would like to make a slightly lighter stuffing for your thanksgiving dish, this Pistachio and Apricot stuffing recipe is perfect! Heat the oven to 220ºC/ Gas 7.

Gently heat the olive oil and half of the butter in a large frying pan.

Add the onions and cook gently for 10-12 minutes until they are golden brown. Add the garlic and cook for another minute.

Remove the onions and garlic from the heat, pour into a large bowl and cool.

Add the breadcrumbs to the bowl and ¾ of the pistachios, the apricots, sage and eggs. Mix really well. Season the stuffing.

Pour into a greased ovenproof dish.

Bake for 20 minutes until the stuffing is golden.

Decorate the stuffing by sprinkling over the remaining pistachios.
