In today’s episode, Chef Um Rashid is sharing with us the recipe of a famous Middle eastern dish – Khabisa, and along with her, we have Yusra (@yousra_madbouli) helping her make this sweet connecting us to our roots.
A simple and delicious semolina dish for your iftar and Eid gatherings; Semolina.
Instructions:
Roast the semolina in a pan until it turns golden. In another pot, bring 2 cups of water to boil, then add a bit of saffron into it. Add sugar, cardamom, and oil into the water and give it a good stir. Include the roasted semolina and vermicelli in the water mixture and throw in black raisins for a pop of color. Pour the remaining saffron water and stir it until it is mixed properly. Plate it on a dish and it is ready to be served!
