Ingredients
Stuffed Bell Pepper Soup
- 1 tbsp. extra-virgin olive oil
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 onion
- 2 cloves garlic
- Salt
- Freshly ground black pepper
- 6 c. Chicken/Vegetable Broth (not in stock)
- 1 (28-oz.) crushed tomatoes
- 1 (14-oz.) fire-roasted diced tomatoes
- 2 tsp. dried oregano
- 1 c. white rice
- Freshly chopped parsley

Stuffed Bell Pepper Soup
Steps
1 Done | 1In a pot add 1 tbsp. virgin olive oil on low heat and saute the minced garlic |
2 Done | 2After the garlic starts to sizzle add the chopped onions and stir for 3 mins |
3 Done | 3Add the tomatoes, turn the heat on medium and stir for 5-7 minutes until the diced tomatoes, onion and garlic turn into a paste like texture |
4 Done | 4Pour in the chicken/vegetable broth and add in the freshly ground black pepper and dried oregano. Keep the broth in a very low heat for 10 mins, cover it and let it simmer |
5 Done | 5In another pot cook the rice |
6 Done | 6Once your broth has decreased slightly add in all the bell peppers and stir for another 3 mins |
7 Done | 7Add rice into the soup or serve it individually. Also, add fresh parsley over the dish for some flavorsome and colorful treat. |
