Ingredients
- 500g of breadcrumbs
- 2 large onions, finely sliced
- 100g dried apricots, finely chopped
- 100g pistachios, roughly chopped
- 3 crushed garlic cloves
- 2 tablespoons of chopped fresh sage
- 5 beaten eggs
- 2 tablespoons of olive oil
- 50g unsalted butter
- Salt & freshly ground black pepper

If you would like to make a slightly lighter stuffing for your thanksgiving dish, this Pistachio and Apricot stuffing recipe is perfect! With the sweetness of apricots complementing the turkey so well and with the taste of pistachios, this modern alternative Pistachio and Apricot stuffing tastes great! You can use various breads to make both stuffing recipes, which is good news if you are gluten free as this stuffing works well with gluten free bread.
Steps
1 Done | 1Heat the oven to 220ºC/ Gas 7. |
2 Done | 2Gently heat the olive oil and half of the butter in a large frying pan. |
3 Done | 3Add the onions and cook gently for 10-12 minutes until they are golden brown. Add the garlic and cook for another minute. |
4 Done | 4Remove the onions and garlic from the heat, pour into a large bowl and cool. |
5 Done | 5Add the breadcrumbs to the bowl and ¾ of the pistachios, the apricots, sage and eggs. Mix really well. Season the stuffing. |
6 Done | 6Pour into a greased ovenproof dish. |
7 Done | 7Bake for 20 minutes until the stuffing is golden. |
8 Done | 8Decorate the stuffing by sprinkling over the remaining pistachios. |
