Cauliflower 4-5 florets
Gluten Free Penne Pasta 1 cup (boiled)
Mushrooms 2-3 pieces
Chicken Breast 2 pieces (cubed)
Olive Oil 1 tablespoon
Garlic 2 cloves (minced)
Salt to taste
Pepper to taste
Chili Flakes ½ teaspoon
Oregano ½ teaspoon
White pepper ½ teaspoon

While all kinds of pasta seem to have an alternative healthy version, the alfredo sauce has always been challenging to experiment with. However, we have made this easy!

For our carb-conscious crowd, opt for zoodles instead of whole wheat pasta and it will taste just as good. Try out this healthy yet delicious Alfredo Pasta and enjoy your guilt-free comfort food!

    Pour some olive oil into a pot full of hot water. Add a dash of salt and a cup of pasta to the pot and bring to boil. Meanwhile, cut some cauliflower florets, wash, drain and boil in a separate pot. Once both are boiled, drain them and keep them aside.

    Marinate the chicken with salt and pepper. In a pan, pour some olive oil and place the marinated chicken breasts.

    Meanwhile, in another pan, add minced garlic to heated oil and saute until aromatic. Spice it up with salt, pepper, chili flakes, oregano, and white pepper. Mix them well. At this point, if you wish, you can add sliced mushrooms to enhance the flavor. While the mushrooms saute, switch to make the sauce

    Here is where the magic happens – in a blender add the boiled florets and blend until smooth. Add water to the cauliflower if needed. Pour this cauliflower paste into the pan and mix well with the spices. If you want a hint of cheese, you may add low-fat cheese. Once the sauce thickens, add pasta to it and fold carefully.
